Dueling Chef 2009 – Liliana’s Wins!
The fnals of the 2009 Dueling Chef Competition at the Madison Food and Wine Show featured a showdown between newcomers Liliana’s and veteran champions Restaurant Muramoto. It was a heated battle featuring Lobster as the mystery ingredient.
The chefs, assisted by their sous chefs, not only battled each other, they also battled the makeshift equipment issues that such a setup inherently creates. And yet, as the pictures attest to, they took this competition incredibly seriously and in the end both sides turned out some spectacular, beautifully plated food.
Dishes:
Muramoto: Lobster, Three Ways; Lobster Jambalaya with Avocado Marble and Chinese Sausage Shavings
Liliana’s: Warm Salad of Mushroom, Bacon and Bok Choi with Tomato Salsa and Lobster; Sweet Potato Pancake with grilled pineapple, and brown butter sauteed lobster on an avocado puree, with glazed carrot puree and tomato oil
In a very clear upset, Chef Daniel Smith and Sous Chef Scott Peterson of Liliana’s beat out Restaurant Muramato’s Chef Justin Carlisle and Sous Chef Shinji Muramoto.
